You can actually make healthy bird pudding using chia seeds, and when you soak them in water for an hour or two, they become somewhat gelatinous with a consistency similar to tapioca pudding.

Chia seeds are able to absorb several times their weight in water when soaked for a few hours, and dumping some of these seeds and adding fresh chopped fruit, some almond milk and some dried nuts may tempt the bird to eat them.
